I didn't start hunting Bounsweet until after the SWSH started. I've hatched 12 of them but when I go to the shine recorder, it says I only hatched 8. I just want the credit I should have for the missing 4 Bounsweet.

EDIT: I double checked the Bounsweet in my pc(always keep shiny hunted hatches in pc for a while) & they weren't obtained & hatched until after the SWSH started. Not sure why I don't have credit for them.

Signups starting and the hunt actually starting are two different things.

It shouldn't be. I started my hunt the day the SWSH started. I should have credit for those extra 4 eggs. It's never done this before.

You picked up 4 eggs on November 13th but before reset; those don't count.

Every SWSH ever has always had at least one day of downtime between when signups start and the actual hunt starts. When you mouse-over the SWSH icon at the top-right during this downtime, it even warns you: "don't start grabbing eggs yet".

I'm certain I waited to grab eggs until after it started.

Again, it says "Adopted on November 13th, 2017 at 3:50 PM" or something like that. The SWSH didn't start until 11:55 PM on the 13th.

Guess I'm out of luck then but I swear I've never had this issue before. I've always adopted the day it started & my hatches always counted.

If they're going to be sneaky like this, they shouldn't open entries until eggs count toward the total.

Nobody is being sneaky. The SWSH has always been open for a day to allow people to sign up unless explicitly stated otherwise.
It has always been this way. If you adopt eggs before the start of the competition, then they won't count. Simple, and that's what's happened in this case.

The reason there's a day off in between is to ensure everyone's on an even playing field. Not opening signups until eggs count would be unfair to those who (for instance) haven't ever obtained the SWSH Pokemon before, and thus must do so in order for it to appear in their Shine Recorder as a possible hunt. It would also prevent people from starting to breed a day early, thus making eggs a lot tougher to find in the first day or so of the hunt.

Just obtaining the egg/pokemon itself should make it show up in the shine recorder. Grab one from the shelter & done. Not that hard. Either that or make it so you know what will be hunted but can't sign up until eggs count.

Pumpkinking made a lot of good points about fairness; people get a chance to hatch the egg if they need it (and it's not hard to hatch an egg to become eligible), and they can also get to breeding eggs for people. Your suggestions are sort of splitting hairs. There's really no downside to what we have currently since all you have to do is read the text that roughly says "Do not begin hatching eggs until the hunt starts." It's always worked this way without issues so no need to change anything.

Totally...useless

I would go as far as to say that there's an inconsistency. For SWSHs you have to obtain the eggs after the hunt officially starts, regardless of when you sign up. This this somewhat similar to shiny races, where you have to obtain the eggs after the race is queued to start(every 4 hours, granted you have an opponent in the case where you use the matchmaking). Meanwhile, for all other types hunts, you can obtain the eggs before you start your hunt. If anything needs to be more consistent, it would be to always require you to obtain eggs after starting your hunt.

It's just like I said in my second point. People would be allowed to breed before the hunt started. They just couldn't sign up for one until the hunt actually did start so their egg hatching would always count.

I also did read it & I'm sure it said I could begin hatching.

Like I said, there's no need to change something that works.

And no, it didn't say that. Your shiny was adopted during the day, not at reset. I'm locking this since there's no error that occurred.
