How long does it take to see more eggs? (when it says seeing 60 out 100 species)

Refresh the Shelter with the "show more" button, and you'll get a new randomly chosen batch of 60, which is likely to include many eggs that weren't shown in the original batch. Refreshing several times will eventually let you see all the eggs in the Shelter over the course of several refreshes.
