Uh, you try and find another hunt anywhere even close to 3k. I know of it because it was a SWSH shiny (and of course it was at the top of the most eggs list).
I found one that is longer if you still care. It's andy021156 's https://gpx.plus/info/ozsdA and 3148 eggs is way too many eggs to hatch... even if it was over 2 and a half years.

370 eggs in 2365 days
I punched in at 1,210 eggs for a Furfrou, over six months. It doesn't hit the 3,000 record but it's a pretty painful process.
On the complete flip-side, there was the time I got a Nidoran F on the same day as an Elekid - in seven egg and 89 eggs - which isn't half bad for shinies.
And even more than that, the VERY FIRST Aloan Meowth I picked up was a Shiny, even if it wasn't a Shiny Hunt.
My longest hunt, in terms of time, I guess would be my shiny https://gpx.plus/info/sVWSA at 589 days and in terms of eggs hatched, it would be my shiny https://gpx.plus/info/GBIaP at 960 eggs. Although my Duskull hunt (still ongoing from Sep 2015 at 1120 eggs) beats both in terms of eggs hatched and time taken.
My longest hunt in terms of eggs is Skitty at 871 (hatched in 54 weeks), in terms of time is my still in progress EB hunt started Feb 1/13... though admittedly still under 400 eggs in that time xD
Crazy some hunts go into the thousands o_o
Well, I've still not hatched it yet, but on the 15th I'll have been hunting Winter Vulpix for 4 years, currently on egg number 698 with long breaks through-out. Lol. Not as long as some hunts in either way but thought it'd be fun to throw out there.
If anyone has found a longer one (time-wise) than a hunt I finished the other day I'll be impressed
