You can go to your dex and check out the rarity on eggs.

I'm pretty sure people just guess by the amount of times they're seen, that or they know from the games...I'm not really sure. like I know phione is WAY more rare then oddish, but oddish is still more uncommon then another more seen pokemon.
But honestly I'm not sure... ( thought you were talking about OTHER people knowing YOUR rarity. If you want to know your own see above posts!) The higher the number, the longer it takes to hatch. But if you're good at finding people to click your eggs for you, you can hatch stuff in no time at all. The time it takes for your egg to hatch is dependent on how many people click/view your eggs. If a bunch click in a short period of time, it'll hatch faster than if only a few click each day. --------------------       - I do my best to click back. |

And you don't need to hatch, it tells you the rarity next to the eggs in the dex aswell.
