I was really upset with myself that I lost the chance to evolve my pink caterpie, so I was wondering, for those pokemon that have early evolution levels (and users who can't be constantly watching their eggs and the like), would there be a way in the future to have an item that will auto-evolving (while user is away say for like vacation, work, school, etc) OR a way to temporarily freeze level gain?

The only functionality you lose out of by over leveling pokemon would be the level brackets for battles. Otherwise level requirements are "greater than or equal to X".
Edit: I guess you can also get less breeding compatibility than you wanted if your target level is below 100 for some reason.
